Research has shown that a compound in olive oil, called oleocanthal, can prevent the production of substances in the body that lead to inflammation, which is a defining characteristic of rheumatoid arthritis. This anti-inflammatory effect of oleocanthal is similar to that of medications like ibuprofen and aspirin.
