Marinate Safely

Before you fire up the grill, you may want to marinate your meat — but there are a few rules of marinating safety. First, marinate your meats in a container made from glass or food-grade plastic. The acid in metal containers may interact with the marinade and contaminate the meat, according to the USDA. Next, keep the marinating meat in the fridge which may keep the meat in the “safe zone” — below 40°F. Once you take the meat out, remember to toss the leftover marinade and set aside some fresh sauce strictly for after-cooking purposes.
