Balsamic vinegar is made from wine vinegar blended with grape juice and caramel. Traditional balsamic vinegar is made from fermented white Trebbiano grapes.

Balsamic vinegar is thought to work for weight loss in part by slowing the rate at which food moves from the stomach to the intestine and by promoting a feeling of fullness. Balsamic vinegar is thought to work for type 2 diabetes in part by improving the function of insulin-releasing cells and increasing insulin secretion. Balsamic vinegar has also been shown to have antioxidant and cholesterol-lowering effects.
There are no reports of significant side effects with balsamic vinegar.
